I still have a bunch of thyme left over from my last crock pot baking adventure, so I thought I’d use it to make a batch of simple syrup for an herby lemonade cocktail. This syrup keeps pretty well in the fridge for at least a week– I like having it on hand to mix myself a drink when I get home from the office.

Hard Thyme Lemonade Recipe
Ingredients for Thyme Simple Syrup:
- 1 1/2 cup of sugar to 1 part water
- 1 bunch fresh thyme
- 3 slices of fresh ginger root, crushed
Ingredients for Lemonade Cocktail:
- Lemon juice
- Soda water
- 2 shots gin (optional)
In a saucepan, bring the sugar, water, thyme, and ginger to a simmer until the sugar is fully dissolved. Let it cool, then strain the liquid into a container or bottle for storage.
Fill up a glass halfway with some ice. Add in equal parts lemon juice and simple syrup (I start with 1/4 cup of each and then adjust proportions to taste). Add gin to the glass and stir. Top the glass off with soda water. Garnish with more thyme if desired.
